I am gearing up for our Fall schedule, I am all about getting dinner on the table in a fast and easy way but I also want food to have a quality, homemade feel even if I take some "shortcuts".
For this Easy Shepard's Pot Roast Pie recipe, I used Stouffer's Complete Skillets Yankee Pot Roast and topped it with homemade mashed potatoes.
It makes enough to feed a crowd I serve it in a large 3-quart (3.3 L) dish.
Being able to save time preparing dinner and keeping it to one-dish, frees up my time and makes it easier to clean up.
Read on to see my grocery haul from Walmart and what I made as dessert to go with this Easy Shepard's Pot Roast Pie dinner.

Shepard's Pie is something that I grew up having and it's one of the most comforting foods to eat, especially when the cooler weather hits.
The homemade mashed potatoes component of this recipe takes inspiration from How to Make the Perfect Mashed Potatoes from The Little Kitchen.
Julie's recipe is very similar to how my mom always made mashed potatoes.
This Easy Shepard's Pot Roast Pie makes more than enough to feed our little family of 3 with extra for leftovers for lunch the next day!
It would easily be enough for a family of 4.
Easy Shepard's Pot Roast Pie would also be great for a dish to bring to a potluck since it is big enough to feed a crowd.
