Growing up, I always had dinners that matched that formula and it’s sort of ingrained in me to have that balanced plate for a satisfying dinner. Eric asked me to pack him the leftovers for work the next day, so this dinner was definitely a win for him (he uses a simple dairy-free dressing for the wedge salad).
You can serve the wedge salad with your favorite creamy dressing or if you want to make a homemade dressing, may I suggest: Homemade Buttermilk Ranch Dressing or a lighter option, Lemon Dijon Dressing. Optionally, you can serve the salad with some sliced grape or cherry tomatoes.

Here’s an idea for serving the leftovers next day: Using flour or corn taco tortillas you can make Pork Corn Tacos or Lettuce Wraps. I would just cut the pork up into smaller pieces and serve it with fresh chopped cilantro, chopped red onion, taco sauce or fresh pico and of course a little cheese on top.

Marinated Pork Roast with Wedge Salad and Baked Sweet Potatoes Dinner
Marinated Pork Roast with Wedge Salad and Baked Sweet Potatoes is a savory, a little sweet, and fresh dinner, perfect for when you need dinner on the table in 30 minutes.
Ingredients
- 1 package Smithfield® Marinated Homestyle Pork Roast
- 2-4 wedges Iceberg lettuce
- 2-4 small sweet potatoes
- salt and pepper to taste, optional
- 1 pinch Italian parsley for garnishing, optional
- 2-4 tbsp unsalted butter for serving, optional
- your favorite dressing for the wedge salad, optional
- 4 cherry or grape tomatoes, sliced for serving with the wedge salad, optional
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Slice the pork in half-inch to 3/4 inch sections. Place slices in a 9 x 9-inch baking pan if making half or a 9 x 13-inch pan if making all the pork. Bake in the oven for 30 minutes.
- Bake small sweet potatoes in the same oven, on another rack over a foil-covered baking sheet. If you have larger sweet potatoes, you can start them earlier, make them ahead, or just cook them a little longer. You can also cut them into smaller pieces to speed up the baking time.
- While the pork and sweet potatoes are baking, prepare the iceberg lettuce wedge salad by slicing a head of lettuce into desired wedge sizes. Serve the wedge salad with your favorite dressing.
- When the pork slices and sweet potatoes are done, check for doneness (cook longer if necessary and use a meat thermometer for accuracy & juices should run clear) and plate and serve with the wedge salad and dressing. Enjoy!
Notes
Leftovers Idea: You can use any leftovers to make lettuce wraps or pork corn tacos for the next day.
Pork roast goes great with applesauce, plain Greek yogurt, or sour cream for serving.
