Frozen Stuffed Dates
Frozen Stuffed Dates are a healthy alternative to store-bought candy that you can make right at home with simple pantry ingredients like sunflower seed butter (or peanut butter or your favorite nut butter), dipped into a chocolate-coconut oil mixture and sprinkled with coconut flakes and ground cinnamon.
Ingredients
- 5-6 Dates, pitted, halved
- 2-3 tablespoons sunflower seed butter
- Chocolate sauce (1/2 cup chocolate chip morsels + 1 tablespoon coconut oil)
- 1-2 tablespoons Unsweetened coconut flakes
- 1/2 teaspoon (a sprinkle) of ground cinnamon
Instructions
- Stuff the dates with sunflower seed butter: Line a rimmed baking sheet with wax or parchment paper and set aside. Cut open the dates and remove the pits; discard or compost the pits. Using a butter knife or spoon, put sunflower seed butter (or peanut butter or your favorite nut butter) into the well of each date half being careful not to overstuff.
- Melt the chocolate-coconut oil mixture: in a small bowl, add the chocolate chips and coconut oil, microwave on high for 30 seconds, and then stir, repeat 2 more times or until fully melted and smooth.
- Finish assembling and freeze the stuffed dates: Dip the sunflower seed butter-stuffed dates into the melted chocolate mixture, nut butter side down. Place on the prepared lined baking sheet. Sprinkle with coconut flakes and sprinkle with cinnamon (add any additional toppings of your choosing) and freeze for 20 minutes or until the chocolate is solid (the time may depend on the temperature of your particular freezer). Enjoy right away or store in an air-tight container in the freezer.
Notes
- For storage: Keep the stuffed dates in a freezer-safe, air-tight container in the freezer.
