Celebrate Fiesta Friday with these delicious grilled cheesy chicken fajita quesadillas. They are cooked to perfection and loaded with chicken and pepper jack cheese!
Fridays are Kim and my favorite day of the week.
Not just because it means the weekend is upon us, but it also means Tex-Mex.
Fiesta Friday is what we call it, and that's the day when we break out all the necessities for cheesy, spicy dish.
When it comes to Tex-Mex, all you need is the standard ingredients to make a great meal.
The required components include tortillas, cheese, onions, peppers, salsa, limes, Taco or Fajita Seasoning, and sometimes meat.
For this recipe, we used all of the above to create a mouthwatering offering.

Preparing this recipe is straightforward and doesn't take a lot of time.
Which, in turn, means you have more time to spend with your family and friends on Friday night.
Simply cut the vegetables, shred the cheese, cook the chicken and vegetables, stuff the tortillas, and grill everything for a crispy crust.
It only takes about 50 to 60 minutes to whip together a cheesy, grilled dinner that everyone will enjoy.
