It makes a lovely simple syrup that is very woodsy, vibrant, and aromatic.
It goes lovely with citrus flavors and is a great addition to cocktails and mocktails.
In the Mid-Atlantic region, where we are, it usually stays green through the winter. Spring is best for picking it for simple syrup when the growth is young.
However, I don’t let the season get in the way of when I want to enjoy rosemary simple syrup. If you pick it late in the season, just keep in mind that it might be a little stronger in flavor. Make sure it steeps for only 5 minutes when you make it!
