Jiffy Cornbread Johnny Cake
Hi everyone, do you love the classic Jiffy Cornbread mix?
We do too, that's why we are including the recipe and directions in our own words for Jiffy Cornbread Johnny Cake with our own photos.
We include this recipe in case you are in a situation where you have the mix and you have misplaced or discarded the Jiffy box with the directions.

Ingredients
- 1 box of Jiffy Cornbread Mix
- 1 large egg
- â…“ cup milk - we use whole milk
- butter or cooking spray, for greasing the pan and parchment paper
Kitchen Tools

- medium-large mixing bowl
- measuring spoons & cups
- 2-cup wet measure
- fork for mixing
- parchment paper
- 8x8-inch square baking pan
- baking spatula - for scraping the mixing bowl
- offset spatula - for spreading the cornbread batter
- knife, for cutting
- cutting board
- Oil sprayer - we use the "Misto" brand
How to Make Jiffy Cornbread Johnny Cake
Step 1
Prepare the Pan & Make the cornbread batter: Preheat your oven to 400 degrees F(204 degrees C).
Butter an 8x8-inch square pan, scrunch a large enough piece of parchment paper and unfold and fit it into the pan, butter the parchment paper or spray with cooking oil. (the parchment will help when you want to lift the cornbread out of the pan and cut it on a cutting board.)
In a medium-large mixing bowl, add the Jiffy cornbread mix, add the egg, and milk, and mix until just combined - do not overmix!
Add the batter to the prepared pan, using a baking spatula to scrape the mixing bowl and get all that batter.
Spread the batter into the pan using an offset spatula so that it's evenly spread.
Step 2
Bake the cornbread batter in the preheated oven for 16-20 minutes (16 minutes works best for us!) You can test for doneness by inserting a butter knife or toothpick in the middle and it should come out clean.
When the cornbread is done allow it to cool for 5 minutes before cutting and serving. Enjoy it warm!
