Tiramisu Chia Pudding
Hi Everyone, if you are looking for a tiramisu flavored chia pudding, you are in the right place!
This recipe meshes together two very different and delicious dessert components which are so creamy and satisfying on their own but somehow, go together perfectly!
Ingredients for this Recipe
This recipe has these 3 components:
- 1 package ladyfingers, store-bought
- 1 recipe chia pudding
- 1 recipe (the tiramisu creme component only)
Here’s a breakdown of the specific recipe ingredients:
Tiramisu Creme
- 6 egg yolks, large
- 1 cup granulated white sugar, sifted to remove any lumps
- 1 1/4 cups Mascarpone cheese
- 1 3/4 cups whipping cream
- 1/8 teaspoon cream of tartar, optional, suggested for helping to stabilize the whipping cream
- 1 teaspoon pure vanilla extract
Chia Pudding
- 6 tablespoons chia seeds, dry
- 2 cups milk, or the same amount of non-dairy milk like almond, soy, cashew, or coconut
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon pure maple syrup, optional, or honey or preferred sweetener – this is optional, since there is sweetness in the Tiramisu Creme
Topping
- chocolate shavings – about 1 teaspoon per portion or you can substitute cocoa powder to dust the tops of the servings
- 2 packages ladyfingers (oft sponge cake kind from the bakery section of the grocery store) – portion about 2-4 ladyfingers per trifle cup, this will greatly depend on the size of your serving dishes

Ingredients

Instructions
To make the chia pudding (1 day ahead)
- In a medium bowl or 32 ounces (2 1/2 cup) mason jar (with lid), mix 2 cups milk (or same amount non-dairy milk) with chia seeds, pure vanilla extract, cover and let sit in the refrigerator for 5 minutes. After 5 minutes, take out and stir or just shake it if it's in a mason jar, then allow to sit for 1-2 hours or overnight.
To Make the Tiramisu Cream
- Using a handheld electric mixer on low, make whipping cream by combining 1-3/4 cups whipping cream, whip until bubbles form, then add 1/8 cream of tartar, and 1 Tsp. vanilla extract. Whip until stiff peaks form. A trick to seeing if it's done whipping: when you start to turn the bowl of whipped cream upside down, it should not slide down the bowl, it should stay stuck in the bowl.
- Bring a pot of water to boil either in a double boiler or just a metal bowl over a medium pan of water (use baking mitts!) add 1 cup sugar and 6 egg yolks. Reduce to simmer and stir continuously for 10 minutes. Remove from heat. Using a hand-held electric mixer, on medium-high, whip the yolk-sugar mixture until light "lemon" colored.
- Add the Mascarpone cheese to the yolk-sugar mixture until combined. Add prepared whipped cream mixture by gently folding in with a baking spatula until there are no streaks. Cover and place in the refrigerator to chill until you are ready to assemble.
Assemble the Tiramisu Chia Pudding Dessert
- Layout your individual dessert/trifle cups or dishes, spoon an even amount of chia pudding into the bottom of each dish, leave 1/2 the chia pudding for the final layer.
- Spoon an even amount of tiramisu cream to the "middle" of the desert, on top of the first chia pudding layer. Leave enough room for the final chia pudding layer.
- Add the final chia pudding layer, spooning an even amount on top of the tiramisu layer. To garnish add 1-2 ladyfingers and chocolate shavings or a dusting of cocoa powder garnish. You can chill this recipe (covered) ahead of serving. Serve cold. Enjoy!
