INSTANT POT SWEET POTATO CHICKEN CHILI
Hello Everyone, it is officially that time of year! The time of year where all you want to do is have a warm bowl of chili and sit by the fire. This recipe is here to save you! It is simple, quick, and tasty.
I love making sweet potato chicken chili in the instant pot because it bring out the flavors of all the ingredients in such a magical way. I love topping this chili with shredded cheese, avocado, and plain Greek yogurt. Greek yogurt is my favorite alternative to sour cream because it has no fat and is filled with protein. It still adds that tangy-ness and cooling sensation to pair with hot food, but with added health benefits!
If you do not have an instant pot, this can also be made in a crock-pot or dutch oven, it will just having a longer cooking time. I also found that if you want to adjust the consistency you can pressure cook it for 10 minutes longer at a time until it is your desired consistency. If you feel like it has become to thick, add more tomato sauce or water to thin it.
INGREDIENTS FOR INSTANT POT SWEET POTATO CHICKEN CHILI
- 1/2 cup diced onion
- 1.5 cups kidney beans
- 1.5 cup black beans
- 2 cups diced sweet potato
- 1 cup frozen corn
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1 (14.5 oz) can diced tomatoes
- 1 can tomato sauce
- 2 Tbsp chili powder
- 1 tsp cayenne pepper, optional
- Ground chicken
- 1 cup vegetable broth
- optional toppings: plain Greek yogurt, cheese, avocado, scallions, parsley, or cilantro

Ingredients
- 1/2 cup diced onion
- 1.5 cups kidney beans
- 1.5 cup black beans

- 1 cup frozen corn

- 1lb ground chicken
- 1 cup vegetable broth
- optional toppings: plain Greek yogurt, cheese, avocado, scallions
Instructions
1. Turn instant pot on and click the saute function key, then add ground chicken until almost fully cooked. Then add minced garlic to release its flavors for about 3 minutes.
2.Once chicken is done cooking, add the rest of ingredients to the instant pot (except the optional toppings)
3. Close lid and use the chili button on the instant pot and set to cook for 30 minutes.
4. Once pressure starts to release allow the steam to leave the pot, then open the instant pot and let cool to serve!
5. Add any additional toppings of your choice.
