This Watermelon Lime Mint Salad recipe is light, hydrating, refreshing, and the perfect fruit salad for the Spring and Summer months. With zesty lime and refreshing mint, this cooling salad is sure to please on those hot days.

Hi Everyone! I am already thinking about perfect Summer salads even as we are still in the midst of Spring.
There are only 5-6 ingredients to this salad some of which are optional and it only take minutes to prepare.
To save time you can even purchase pre-cut watermelon from the grocery store which I have done on occasion.
The optional ingredients (kosher salt, sugar, feta cheese) in the recipe serve to heighten the sweetness of the watermelon flavor.
If you have a watermelon that is very ripe and sweet you might be able to forgo the sugar.
The small amount of salt serves to make the sweetness come out more and goes with the lime flavor.

This Watermelon Lime Mint Salad recipe has the best cooling effect with the combination of watermelon, mint, and lime - it's perfect for those hot days of Summer and a great contender for a Mother's Day, Memorial Day, Father's Day, or 4th of July recipe.

I also love how watermelon is so hydrating and this salad would be great after a workout or for a snack.

You can spritz a lime wedge to get more of that citrus flavor when serving.
