Bagel with Cream Cheese and Scallions
Hi Everyone, I love a good bagel breakfast idea. Sometimes, when you are in a rush to eat something in the morning, a bagel is where it’s at for the ease with which to prepare it.
I love coming up with easy bagel ideas for breakfasts and snacks; this recipe is so simple but very flavorful and delicious, thanks to those scallions and extra virgin olive oil.
It’s a satisfying bite. You can also add lox on top if you wish, but I don’t call for it here. The way I prepared it here is a vegetarian option.
Ingredients
- 1 plain bagel, or bagel of choice
- 1-2 tablespoons butter, for toasting the bagel in the cast iron skillet
- 2-4 tablespoons regular cream cheese or Neufchantal cheese
- 3 tablespoons scallions (green onion), chopped
- 1-2 teaspoons (a drizzle) of extra virgin olive oil
- flakey salt, amount to taste
- fresh ground black pepper
Kitchen Tools
- measuring spoons and cups
- cutting board
- bread knife – for bagel, if it isn’t already sliced

- chef’s knife – for chopping scallions
- pepper grinder – this is the one I use
- mesh strainer/colander – for washing scallions
- olive oil bottle – for drizzling, this is the one I use
- plate – for serving

- 1/8 teaspoon flakey salt, or amount to taste
- 1/4 teaspoon fresh, ground black pepper, or amount to taste
Instructions
- In a large cast-iron skillet, melt the butter over low-medium heat, spread the unsalted butter in the pan, so that the bottom of the pan is coated. Add the bagel slices and toast on each side until they are toasted to your liking on both sides. When the bagel is toasted, turn off the heat and transfer the bagel to a plate.
- Spread the cream cheese on the bagel, sprinkle the chopped green onion - you may need to press them down into the cream cheese so they stick and don't bounce off the bagel. Add a drizzle of olive oil and sprinkle with flakey salt (like coarse kosher salt or sea salt) and fresh, ground black pepper. Enjoy!
