The ham bone adds extra weight to the ham, so don’t include that in the weight of the ham. This recipe is very forgiving and if you have more or less ham – that’s fine! It will later be removed from the soup.

Ingredients
2 tablespoons regular olive oil
1 medium onion, chopped or sliced
2 cloves garlic, minced
1 shallot, chopped
2 cups carrots, peeled and sliced
2 stalks celery, chopped
1 pound cooked ham (ideally with ham bone, not included in weight), cubed
1 cup frozen peas
1 cup frozen corn
9 cups water
1-2 teaspoons Better than Bouillon (vegetable or chicken flavor)
1-2 fresh thyme sprigs, plus more for optional garnishing
salt and fresh ground black pepper, amount to taste
Instructions
On your Instant Pot, press the saute button, add the olive oil, garlic, shallot and onion. You can also add the carrots and celery at this time or add them before closing the Instant Pot. Saute for about 5 minutes or until the onions are translucent.
Add the ham (with the ham bone, if you have it), the peas, corn and any remaining vegetables, if you haven't already.
Add the 9 cups water (or up to the "Max" line in your Instant Pot, if you want to maximize the amount of soup and just adjust the bouillon accordingly) and 1-2 teaspoons vegetable (Better than Bouillon, the amount depends on how much seasoning is on the ham).
Make sure the valve on the lid is on "Sealing." Lock the lid on the Instant Pot and cook on the "Soup/Broth" setting or on manual for 10 minutes (the setting will depend on what model number you have).
When the soup is done, and you hear the beep sound, put the setting on "Cancel/Keep Warm" and carefully turn the valve on the lid to "Venting" (watch your hands, the steam will be hot). Allow the Instant Pot to completely release the pressure.
When the Instant Pot is vented, open the lid.
Take the ham bone out (if you added it), allow it to cool a bit and then cut any remaining meet off of it. Add the meat back to the soup and stir to combine. Serve and enjoy!
