Cake mix cookies are a quick and easy dessert that's perfect for when you're short on time but still want something sweet and delicious. With just a few ingredients, you can whip up a batch of cookies that will impress your family and friends. I'll show you why cake mix cookies are so great and how you can customize them to make them your own.

One of the best things about cake mix cookies is that they're incredibly easy to make. You don't need a lot of ingredients or any special equipment, which makes them perfect for beginners or those who don't have a fully-stocked kitchen.
Another great thing about cake mix cookies is that you can use any flavor of cake mix you like. Whether you prefer chocolate, vanilla, or something more exotic like lemon or pumpkin spice, there's a cake mix out there that will work for you.
Something I love about these cookies is that they don't really spread. There must be some ingredients in the cake mix that help prevent that. So if you love cookies that retain their shape well, then these cookies are for you!
Finally, cake mix cookies are incredibly versatile. You can add all sorts of extras to them, like chocolate chips, nuts, sprinkles, or dried fruit. This means you can customize your cookies to your liking and create something truly unique.

Making cake mix cookies is a breeze. Simply mix together your cake mix with a few basic ingredients like eggs and oil, then add in any extras you like. Scoop the dough onto a baking sheet and pop it into the oven - it really is that easy!
Preparation: Put your oven rack in the middle of your oven. Preheat your oven to 350 degrees F (176 degrees C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.

Make the Cake Mix Cookie Batter: In a stand mixer (with the paddle attachment), on low speed, add the eggs, and oil, and mix until combined and smooth. Using a silicone baking spatula or wooden spoon, fold in the chocolate chip morsels and sprinkles. Using a small cookie scoop, #70 (2 ¾ teaspoons), scoop the cookie dough onto the prepared baking sheet(s). You will have to bake in batches (it takes us 4 batches, 1 in the oven middle rack at a time). Fit 12 dough balls on each baking sheet and the last one may have 14 dough balls, for a total of 50. You can top the dough balls with chocolate chips and more sprinkles if you wish - it definitely makes them prettier! Bake for 9-10 minutes in the preheated oven.

When they are done, allow them to cool for a few minutes on the baking sheet before transferring them to a wire cooling rack. Serve and enjoy!

The sky's the limit when it comes to customizing your cake mix cookies. Here are a few ideas to get you started:
