Hi Everyone, I have been looking for easy dinner solutions lately since our kitchen is ripped out.
My mind is going to anything slow cooker, one-pan meals and definitely making use of ANY leftovers.
The night before, I made pan-fried chicken breasts with carrots and peas (frozen) so I had these leftovers and I hate to waste food.
I love all the things you can do with puff pastry and I’ve been keeping some in my freezer so I can make different puff pastry recipes.
Usually, 2 sheets of puff pastry come in the puff pastry packages.
You can make 3 parcels per sheet so you can decide how many you want to make.
When I was testing this recipe, I used the whole package (2 sheets) and we had extra to eat for lunch the next day.
You can customize this recipe for any kind of leftovers you have and choose the kind of cheese or cheese blend you like.
I always have bags of shredded cheese in my refrigerator ready to go for different recipes.
I tried mozzarella and a Mexican cheese blend which both tasted great.
Ingredients
- 1 sheet frozen puff pastry, thawed
- 1/2 cup frozen peas, thawed
- 1/2 cup cooked baby carrots
- 1 breast chicken, cooked & cubed
- 3/4 cup shredded cheese, cheese blend or mozzarella or preferred choice
- salt and pepper to taste, optional

Ingredients
- 1 sheet frozen puff pastry, thawed
- 1/2 cup frozen peas, thawed
- 1/2 cup cooked baby carrots
- 1 breast chicken, cooked & cubed
- 3/4 cup shredded cheese, cheese blend or mozzarella or preferred choice
- salt and pepper to taste, optional
Instructions
- Preheat oven to 400 degrees F. Cut 6 equal rectangular pieces of puff pastry
- Evenly distribute the cooked & cubed chicken, thawed peas & cooked carrots. Add shredded cheese to each parcel. Add salt and pepper to taste (if not already seasoned, if using leftovers).
- Using your fingertips, add a little water to the edges of the pastry to help seal the edge. Using a fork, crimp the edges of the pastry.
- Bake on a foil-lined sheet for 12 minutes or according to the puff pastry package. Be careful not to let the pastry to burn. Allow to cool a few minutes before eating, inside contents will be very hot. Enjoy!
