It uses store-bought, puff pastry, sliced ham, 3 kinds of cheese, and my recipe for quick pickled red onions. It’s golden, crisp, pretty to serve up, and so satisfyingly delicious!

Hi Everyone, this Tarte Soleil, or Ham and Cheese Puff Pastry Sun or Star, is so easy-to-make for a party food appetizer.
This is a Southern French-inspired recipe, my husband’s father’s side of the family is from Southern France and I’ve always loved French recipes.
Other ways to customize this Tarte Soleil
This Tarts Soleil is so customizable, you can swap the ham and cheese for artichoke dip, spinach, feta, or basil pesto, make it sweet with Nutella or jam preserves, or one of your favorite ingredients or flavor combinations.
Everything bagel seasoning or plain sesame seeds would also make a great topping on after the egg wash.
Ingredients
- 2 sheets of frozen puff pastry, thawed
- 5 slices of ham, sliced or torn into pieces
- 1 cup of cheddar cheese blend, shredded
- 1/2 cup quick pickled red onion, patted dry, see notes
- 2 tablespoons finely grated Parmesan
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 large egg, for making an egg wash
- 1 teaspoon of water, for making an egg wash
- 1/4 teaspoon fresh ground black pepper, optional, for serving

How to Make a Tarte Soleil
- Preparation: Place the oven rack in the center of the oven and preheat your oven to 425 degrees F (218 degrees C). Line a baking sheet with parchment paper. Roll out 2 sheets of puff pastry, just to smooth out any creases. You can cut the corners off to make each sheet into a circle or you can leave it a square (as I have in the photos) so as not to waste any puff pastry.
- Make the Parmesan topping: In a small mixing bowl, add parmesan, garlic powder, and onion powder and combine, set aside.
- Assemble: Place 1 sheet of puff pastry on the prepared baking sheet. Evenly place the ripped ham on top of 1st puff pastry, and sprinkle a layer of shredded cheese blend. Evenly layer the quick pickled red onion over the cheese. Evenly sprinkle 1/2 the parmesan mixture and save the rest for the top sheet of puff pastry. Lay the 2nd sheet of puff pastry directly on top of the prepared 1st layer. Place a glass, upside-down, right in the middle of the pastry. Using a chef’s knife, make cuts through all the layers, radiating from the center (like sun rays). Carefully, make 2-3 twists for each piece, it’s only if some of the ingredients fall out, it will all make together and taste delicious. Brush the top with the egg wash and sprinkle the remaining parmesan mixture evenly over the top.
- Bake: Bake in the preheated oven for 25 minutes, after it’s done, enjoy right away!

Notes
- This recipe uses our recipe for, "Quick Pickled Red Onion," you can substitute the same amount for relish or regular pickles of choice or omit them completely.
