Hi Everyone, Spring is here!
I have a timely Easter and Spring-themed dessert, and snack for you: Easter Muddy Buddies Recipe.
There are many opportunities to make these this Spring, for example, teacher's gifts, edible thank-you gifts, and family, and church gatherings.
Who wouldn't want a cellophane bag of these goodies?
You can customize them with your favorite Easter-themed candy, my personal, favorite is pastel peanut M&Ms.
I like them with this recipe because the peanut center goes well with the smooth peanut butter.
The combination of peanut butter and chocolate is a dream!
You get the sweet-salty combo that makes you want to reach for more.
Speaking of chocolate, this recipe uses white chocolate.
I chose white chocolate because it makes for a nice, pretty backdrop for those pastel candies and the combination of white chocolate and peanut butter is good.
I recommend trying to get the best quality white chocolate you can find.
You can substitute the white chocolate for the same amount of milk, semi-sweet, or dark chocolate, if you prefer.
Ingredients
- 9 cups rice Chex Cereal
- 1 cup white chocolate chip morsels (you can substitute the same amount of semi-sweet, dark, or milk chocolate chip morsels if you prefer)
- ½ cup smooth peanut butter
- ¼ cup unsalted butter
- 1 teaspoon pure vanilla extract
- 2 cups confectioner's sugar
- 2 cups peanut M&Ms or Easter-themed candy of your choice
- optional customization: you can add popcorn or pretzels as well

Easter Muddy Buddies Recipe
This Easter Muddy Buddies Recipe is a sweet, salty dessert snack with cereal coated in white chocolate and peanut butter, customized with your favorite Easter-themed candies. Try this delicious snack at your next Easter or Springtime gathering!
Ingredients
- 9 cups rice Chex Cereal
- 1 cup white chocolate chip morsels, you can substitute the same amount of semi-sweet, dark, or milk chocolate chip morsels, if you prefer
- ½ cup smooth peanut butter
- ¼ cup unsalted butter
- 1 teaspoon pure vanilla extract
- 2 cups confectioner's sugar
- 2 cups peanut M&Ms, or Easter-themed candy of your choice or Easter-themed candy of your choice
- popcorn, optional
- pretzels, optional
Instructions
- In a large mixing bowl, add 9 cups rice Chex cereal, set aside
- In a medium saucepan, over low heat, melt the unsalted butter, peanut butter, and white chocolate chip morsels. Stir with a spoon until smooth, melted, and combined.
- Remove from heat and 1 teaspoon of vanilla extract. Pour over the rice Chex cereal, using a baking spatula to get all the chocolate mixture out of the saucepan.
- Mix the cereal until completely coated.
- Add the 2 cups of confectioner's sugar and mix gently until coated.
- Add 2 cups of peanut M&Ms and optional ingredients to customize. Serve, package as edible gifts, and enjoy!
