Hi Everyone, I’m sharing a great dinner option for you and your family on a weeknight or weekend, this Broccoli Garlic Onion Chicken Crust Pizza!
It’s so satisfying, with its protein-packed chicken pizza crust and easily customizable with your favorite toppings!
Ingredients
Chicken Pizza Crust
- 1 cup shredded cheese (we have had success with shredded Mozzarella (the best, so far) and Cheddar) – you want to use a medium cheese
- 2 large eggs
- 1 pound lean ground chicken *you can also use the same amount of shredded chicken
- Optional: Kosher salt and fresh ground black pepper, amount to taste – Sometimes I add salt and pepper, sometimes I don’t, I feel like it doesn’t make a difference once you have the toppings on it, it can always be added when the pizza is done too.
Toppings
- 1 tablespoon olive oil (regular)
- 1 teaspoon garlic, minced
- 1 medium yellow onion, sliced
- 1/2 broccoli crown, cut into bite-size florets
- shredded Parmesan or Romano cheese, optional for topping
- Kosher salt, amount to taste
- Fresh ground black pepper, amount to taste

INGREDIENTS FOR BROCCOLI GARLIC ONION CHICKEN CRUST PIZZA
- CHICKEN PIZZA CRUST

TOPPINGS
- 1 tablespoon olive oil (regular)

Instructions
- Make sure the rack in the oven is in the middle and preheat oven to 400 degrees F.
- Line a rimmed baking sheet with a silicone baking mat (optional) and parchment paper (essential for moving the pizza to a cutting board after cooking). The parchment paper should go to beyond the edge of the rimmed baking sheet.
- In a large mixing bowl, add ground chicken, shredded cheese, 2 large eggs and salt and pepper. Using a fork, mix completely.
- Using a baking spatula, spread the chicken-cheese mixture into a rectangular shape on top of the parchment paper, making sure the thickness is even.
- While the chicken pizza crust is cooking, prepare the toppings: On the stove top, in a skillet, over medium heat, add the olive oil, minced garlic and sliced onions. Stir fry for a few minutes until the onions are translucent. For blanching the broccoli, in a small-medium saucepan, add water, bring to a boil, add broccoli florets, boil for 1 minute, drain and allow to cool.
- Bake in your preheated oven for about 20 minutes (the edges should be start to brown). Remove to add the prepared garlic-onions, broccoli toppings, and cheese and then bake for 10 minutes or more as needed. When it's done move the pizza to a cutting board, cut into 12 pieces, season optionally with Kosher salt and fresh ground black pepper and enjoy!
