Hi Everyone, I have been trying to have more nutritious snacks on hand since Eric and I have been more into fitness in the last few years. These Peanut Butter Energy Bites made with new Windstone Farms Creamy Peanut Butter Packets definitely fit the bill.
I used 4 Windstone Farms Creamy Peanut Butter Packets (each are 1.15 ounces) to make this recipe and it made 35 energy bites total (2 teaspoon size each). I used a medium cookie scoop to make each ones the perfect, even size. I rolled them in matcha tea powder, chopped nuts and unsweetened coconut flakes but you could also roll them in cocoa powder or cinnamon.
Eric is keeping the remaining Windstone Farms Creamy Peanut Butter Packets to snack on during his bike rides since they are the perfect size to travel with. They actually fit right into the back pockets on his bike jersey. He told me, “Don’t take those packets, they are mine!”

- 2 cups quick oats
- 2 tablespoons vegan, gluten-free, soy free plant-based protein powder

- 1/4 cup pure maple syrup
- 1/4 cup wildflower honey
- 1/4 cup semi-sweet or bittersweet chocolate chips
- 1 cup unsweetened coconut flakes (for rolling)
- 1-2 tablespoons matcha green tea powder

Peanut Butter Energy Bites
Peanut Butter Energy Bites are an easy savory-sweet snack recipe that has Windstone Farms Creamy Peanut Butter Portable Packets, trail mix, chocolate, coconut flakes, match tea powder, oatmeal and is naturally sweetened with pure maple syrup and wildflower honey.
Ingredients
- 1 cup your favorite trail mix
- 2 cups quick oats
- 2 tablespoons vegan, gluten-free, soy free plant-based protein powder
- 1/2 cup Windstone Farms smooth peanut butter (about 4 packets)
- 1/4 cup pure maple syrup
- 1/4 cup wildflower honey
- 1/4 cup semi-sweet or bittersweet chocolate chips
- 1 cup unsweetened coconut flakes (for rolling)
- 1-2 tablespoons matcha green tea powder (for rolling)
Instructions
- Add matcha tea powder, unsweetened coconut flakes and chopped nuts into 3 separate small bowls for rolling the energy bites and set aside.
- In a food processor, add trail mix, quick oats, chocolate morsels.
- In a large mixing bowl, add the processed mixture and add protein powder, peanut butter, honey, maple syrup and stir until evenly combined.
- Using a medium cookie scoop (2 teaspoons), scoop the energy bites onto a wax paper lined rimmed baking sheet.
- When you are done scooping the energy bites, roll each one so that it is smooth and then roll it in the matcha tea powder, coconut flakes or chopped nuts.
Notes
- For Storage: Store in an air tight container in the refrigerator if you like them cold or in an air tight on the counter. Consume within 3 days.
