Peanut Butter Energy Bites are an easy savory-sweet snack recipe that has Windstone Farms Creamy Peanut Butter Portable Packets, trail mix, chocolate, coconut flakes, match tea powder, oatmeal and is naturally sweetened with pure maple syrup and wildflower honey. (makes about 35 energy bites, vegan option, naturally gluten-free)
Hi Everyone, I have been trying to have more nutritious snacks on hand since Eric and I have been more into fitness in the last few years. These Peanut Butter Energy Bites made with new Windstone Farms Creamy Peanut Butter Packets definitely fit the bill.
I used 4 Windstone Farms Creamy Peanut Butter Packets (each are 1.15 ounces) to make this recipe and it made 35 energy bites total (2 teaspoon size each). I used a medium cookie scoop to make each ones the perfect, even size. I rolled them in matcha tea powder, chopped nuts and unsweetened coconut flakes but you could also roll them in cocoa powder or cinnamon.
Eric is keeping the remaining Windstone Farms Creamy Peanut Butter Packets to snack on during his bike rides since they are the perfect size to travel with. They actually fit right into the back pockets on his bike jersey. He told me, "Don't take those packets, they are mine!"
