Strawberry Rice Krispie Treats
These Strawberry Rice Krispie Treats are based on a classic rice Krispie treats recipe with strawberry flavor infused throughout. The recipe uses strawberry powder and optionally, you can choose to include fresh strawberries and chocolate to make them extra!
Ingredients
- 3 tablespoons salted butter, You can substitute the same amount of unsalted butter if you don’t have salted butter
- 6 cups mini marshmallows
- 1-2 teaspoons strawberry powder, plus more for topping
- 6 cups puffed rice cereal (like Rice Krispies brand cereal)
- 1 cup semisweet chocolate morsels
- 1 tablespoon coconut oil
- 1 quart of fresh Strawberries, sliced
Instructions
- Prepare the pan: Place wax or parchment paper in the 8x8x2 or 9x9x2 pan and clip the edges with binder clips or clothespins so it doesn't move.
- Make the strawberry rice cereal treats: In a large pot over the stove, on low heat, heat the butter until melted, add the marshmallows (6 cups total), and stir slowly until melted, add 1-2 teaspoons strawberry powder depending on how dark/strong in flavor you want them, make sure it's evenly mixed and then add the rice cereal and mix until combined. Spread them in the prepped pan making sure not to press down too hard so that they don't compact. Optionally, sprinkle more strawberry powder over the pan using a sifter. Allow them to cool before slicing them into squares. When they are cool, cut them into 9-12 squares (or you can do a different size if you prefer)
- Make the Melted Chocolate: In a microwave-safe bowl, add the semi-sweet chocolate morsels and coconut oil and microwave for 30 seconds, stir and microwave again for 30 seconds, stir and if needed, microwave the last time for 30 seconds and stir until the mixture is fully melted and smooth for drizzling.
- Optionally, you can spread melted or chocolate hazelnut spread on top and sliced strawberries for serving. Enjoy!
Notes
Storage: You should eat them right away but you can store them in an air-tight container, at room temperature for up to 2 days.
