Ingredients
SUSHI RICE
- 4 cups of water
- 2 cups of uncooked white sushi rice
- 1/2 cup rice vinegar, I use toasted sesame seasoned rice vinegar
- 1 teaspoon white granulated sugar
- 1 teaspoon fine iodized salt
FOR MAKING THE SUSHI MAKI ROLLS
- 1/4 cup furikake seasoning or sesame seeds, amount to taste, use as needed
- 1 package of sushi nori seaweed wrappers
- 1-2 small cooked sweet potatoes, skins removed
- 1 English cucumber, peeled, cut into thin sticks
- 1-2 carrots, skinned, ends cut, cut into matchsticks
- 1-2 ribs of celery, ends cut, cut into thin sticks
- optional: cream cheese (for making Philadelphia rolls)
- optional: Japanese mayonaise
- optional: Panko bread crumbs, for adding a crunchy texture
FOR SERVING
Kitchen Tools
- large mixing bowl
- 2-cup wet measure
- rice cooker & scoop, for the rice
- small bowls, for ingredients
- small bowls, for serving ingredients
- serving plates or platters
- vegetable peeler
- kitchen towel(s)

- food wrap or large ziplock bag
How to Make Sushi Maki Rolls
Step 1
Make the sushi rice: Using a rice cooker to cook the rice, add the water and rinsed the sushi rice into the “white rice” setting. When it’s done, add it to a large mixing bowl, add the 1/2 cup rice vinegar, 1 tsp sugar, and 1 teaspoon salt, and fold in the ingredients until it’s fully mixed.
Step 2
To Make the Sushi Maki Rolls: Before starting, wrap your sushi mat in plastic food wrap or a large ziplock bag to prevent sticking. On a cutting board, lay out the prepped sushi mat, on top of that lay out 1 sheet of nori, and spread a thin layer of the prepared sushi rice on the nori, leaving a small margin from the edge. Add any combination of desired ingredients in a line, take the bottom (closest to yourself) edge, and roll the sushi maki roll up (away from yourself), keep the roll tight and compact. Use water along the ending edge to “seal” the roll together. Using a sharp knife, cut the roll into rolls, you can put some water on the knife, to get a clean cut, each time, removing any excess roll ingredients, in between cuts, with a damp kitchen towel. Repeat with the remaining nori seaweed wrappers, you can experiment with different ingredient combinations each time if you want. When the rolls are done you can garnish them with sesame seeds or furikake before serving. Serve with pickled ginger, soy sauce, and wasabi paste.
Recipe Notes
- When you are assembling the rolls, you can add optional Panko breadcrumbs for crunch.
