Hi Everyone, this Blue Butterfly Pea Flower Tea Dalgona Coffee takes your coffee experience to a new level!
This tea-coffee drink can be made cold, as shown in these photos, or even hot.
It uses instant coffee, sugar, milk, ice, and blue butterfly pea flower flowers and powder on top, for decoration.
Two Ways to Make the Blue Butterfly Pea Flower Milk
First Method
The beautiful, blue color of the milk on the bottom half of the drink comes from strong-brewed blue butterfly pea flower tea to create an ombre-like effect (as shown in the photos in this post).
Second Method
There’s a second way to make the blue milk, you can heat the milk and add the pea flowers to the milk, simmer for a few minutes and allow the milk to cool to have it cold, or use it to have the drink hot – your choice!

Whipped Dalgona Coffee
- 2 tablespoons Instant Coffee
- 2 tablespoons granulated white sugar

- 2-4 ounces milk or same amount non-dairy/dairy-free milk

For Brewed Tea
- 1 tablespoon dried Blue Butterfly Pea Flower Tea flowers, food-grade
- 3/4 cup hot water, do not use if using the milk-infused method in instructions, see notes

Whipped Dalgona Coffee
- 2 tablespoons Instant Coffee
- 2 tablespoons granulated white sugar
- 2 tablespoons water
- 2-4 ounces milk or same amount non-dairy/dairy-free milk

- 1 tablespoon dried Blue Butterfly Pea Flower Tea flowers, food-grade
- 3/4 cup hot water, do not use if using the milk-infused method in instructions, see notes
Instructions
To Make The Blue Butterfly Pea Flower Tea Milk Bottom Layer (infused milk)
- In a small saucepan on the stovetop, over low-medium heat, add the milk (I like to use whole milk for creaminess but you can use your favorite type of milk and any vegan nut, oat, or rice milk) and optional sugar, if you want the milk to be sweet too (for me, there's sugar in the whipped coffee and that is enough sugar for me). Add the blue butterfly pea flowers. Bring the milk up to a low simmer/boil. Turn off the heat, cover, and let it sit for 5 minutes. Whisk the milk mixture and then strain into the heat-safe glass or mug if having hot or another container, if having it cold. Place in the refrigerator to chill until cold.
- Heat water in a tea kettle over high heat.
- Add 1 tablespoon Blue Butterfly Pea Flower Tea flowers into a mesh tea ball and add to a large mug. Cover and allow to steep for 5 minutes. When it's done remove the mesh tea ball. Use hot or chill it in the fridge.
- Place ice in a glass or 18-ounce mason jar and chill in the freezer for 5-10 minutes.
- Combine the instant coffee, water, and sugar together, until you create a frothy whipped coffee topping (you can do it with a whisk but it takes about 400 whisks; I find it best to use a handheld electric mixer - by far). Whip it to stiff peaks to get a glossy, meringue-like consistency.
- To assemble the drink: You can do 1 large serving or divide it into 2 servings. Using your prepped glass, add the prepared blue milk. Add the whipped coffee topping to the blue milk. Alternately, you can serve it hot with hot blue milk, as discussed above. If you are doing the version where you have the separately prepared, now chilled tea, add the milk to the chilled glass with ice, add the concentrated cold tea (you don't need the full amount because you don't want to water it down too much) and this creates a dramatic "ombre effect" as it slowly spreads, as shown in the photos in this post.

Notes
- How to Make This "Half-Calf" (half decaffeinated):Â Do 1 tablespoon decaf instant coffee and 1 tablespoon regular instant coffee.
- Blue Butterfly Pea Flower-Milk-Infused Method Vs. Pea Flower Tea Added to Milk Versions: I just want to say, that either method is fine. With the 1st method, it will be a solid blue color and more concentrated (less water) than the 2nd method. With the 2nd method, visually, you will see an "ombre-like" effect as the tea combines with the milk which is beautiful - there's not right or wrong way, it just depends on how you want it and your tastes/preferences - it's completely up to you!
