Hi Everyone, grilled cucumbers are a great way to use up that summer bounty of cucumbers.
This grilled cucumbers recipe reminds me of the taste of grilled zucchini or other summer squash.

Grilled Cucumber
Grilled Cucumber is a great way to make cucumbers, especially during the warm weather months when cucumbers are plentiful. All you need for this recipe is a cucumber, olive oil, and salt. Optionally, you can drizzle it with soy sauce and sesame oil before serving. Makes 1-2 servings.
Ingredients
- 1 (or more) cucumber, washed, sliced in half
- 1-3 tablespoons (a drizzle) Regular olive oil
- Fine salt, amount to taste
Instructions
- Prepare the cucumber: Cut a washed cucumber, trim the ends, if needed, spray with regular olive oil and sprinkle with salt evenly.
- Grill the cucumber: Add the halved cucumber to the grill over medium-high heat, grill covered for 4-5 minutes, open and turn over cover, and grill for 4-5 more minutes. You may need to turn it over again, as needed, to fully cook. When it's done, remove it from the heat to a serving tray, and turn off the grill.
- For Serving: Drizzle with more olive oil, sesame oil salt, pepper, and soy sauce.
Notes
- Please note that the cooking time will depend on the type of your particular grill and the size of the cucumber used.
