Hi Everyone, Are you looking for a basic rolls recipe to make for dinner, potlucks or to bring to a holiday gathering? Try these simple-to-make, No Knead Bread Rolls.
This recipe is based on the existing No Knead Bread recipes already on my blog, namely, No Knead Bread.
Ingredients for No Knead Bread Rolls
- 3 cups all-purpose flour
- 1 teaspoon Kosher salt
- 1/4 teaspoon active dry yeast
- 1-1/2 cups of hot water, 130° F, I use water hot out of the tap, make sure you do not boiling or it will kill the yeast.
- 1-2 tablespoons unsalted butter
- 1/2 tablespoon your favorite seasoning mix, amount to taste

No Knead Bread Rolls
No Knead Bread Rolls are a savory, simple and easy-to-make yeast bread recipe – perfect to accompany your own dinner, bring to a potluck or holiday gathering; Brush with butter and top with optional seasoning or leave plain. No stand mixer required! (makes 6-8 dinner rolls)
Ingredients
- 3 cups of flour, , with extra for board, I use Hodgson Mill, Non-GMO Project Verified Flour
- About 1/4 teaspoon dry active yeast, (check the date, make sure it's fresh), I use Hodgson Mill Fast-Rise Yeast
- About 1 teaspoon of kosher salt or preferred type of salt, (for taste), I use Morton Kosher Salt
- 1-1/2 cups of hot water, 130° F, I use water hot out of the tap, make sure you do not boiling or it will kill the yeast.
- 1-2 tablespoons unsalted butter
- 1/2 tablespoon your favorite seasoning mix (for these rolls I used Badia all seasoning)
Instructions
- In a large mixing bowl, add 3 cups flour, 1/4 teaspoon active dry yeast, and salt, and whisk to combine.
- In a 2 cup wet measure, add 130-degree water, then add it to the dry ingredients.
- Mix the water and dry ingredients until combined. Cover and allow to double in size (about 3 hours).
- When the dough has doubled in size, turn the dough out on a floured surface. Using a dough scraper turn the dough over about 11 times.
- Using a dough scraper, divide the dough into 6-8 even pieces. Roll them into balls. Use extra flour if the pieces get too sticky to handle.
- Put a piece of parchment (large enough to go beyond the edges of the bowl) on a rimmed baking sheet.
- Return the dough balls to the parchment-lined baking sheet, arrange in a circle, cover with a tea towel and allow to rise 30 minutes.
- Put a lidded Dutch oven in the middle rack of the oven. (Make sure the knob on the rim is oven safe!)
- Preheat the oven to 450 degrees F.
- Before putting the rolls into the oven, brush with melted butter and sprinkle with your favorite seasoning mix.
- When the oven is preheated and the dough is ready, carefully take the Dutch oven out of the oven, (make sure to use oven mitts!). Place the dough with the parchment paper in the Dutch oven and cover. Return the Dutch oven to the oven. Bake for 30 minutes with the lid on and then 10 more minutes with the lid and parchment paper removed.
- When the bread rolls are done, allow it to cool on a wire rack for 5-10 minutes before serving. Enjoy!
Notes
- The shape of the rolls comes out best if you have a flat-bottomed Dutch oven.
