It has a fresh basil pesto, but you can use any pesto recipe, ripe, fresh-from-the-garden diced tomatoes and it’s topped with extra virgin olive oil, optional Balsamic vinegar (I recommend the highest quality you can find) and sprinkled with flaky salt and fresh ground black pepper.

This year we have a plentiful amount of basil and the tomatoes are coming out of the garden finally and it makes for some great flavor additions to our regular meals.

It’s worth it to have vine-ripened tomatoes because the worst thing is to have tomatoes that taste like cardboard! Not even salt can help an un-flavorful tomato. So, if you are making this recipe off season (Winter) and getting your produce from the grocery store – go with the vine-ripened tomatoes for sure.

Ingredients
- 1 plain bagel toasted
- 4 tablespoons pesto *see notes for links to our pesto recipes
- 1 medium ripe tomato, washed, diced
- 1-2 teaspoons extra virgin olive oil
- 1-2 teaspoons Balsamic vinegar, optional
- flaky salt
- fresh ground black pepper
Instructions
- On a toasted, plain bagel, spread pesto sauce evenly, add diced tomatoes, drizzle extra virgin olive oil, optional Balsamic vinegar, sprinkle flaky salt and fresh ground pepper. Slice in half, if you wish. Enjoy!
