This Beet Salad recipe has beets cooked in an Instant Pot, then chilled, and includes dill, feta cheese, sliced onions, and a homemade, olive oil-lemony vinaigrette dressing.
Hi Everyone, this beet salad is delicious and beautiful as it is nutritious.
It is made with a balance of a few simple ingredients: Beets, onion, fresh dill, and crumbled Feta cheese. You can serve it with lemon wedges and the lemon flavor brightens up this beautiful salad.
Beets are considered a "cool-weather" vegetable and are ready to harvest in the late spring and the fall months.
Beets are at their best from June-October, however, they can be available all year round.
