Beet Salad
Hi Everyone, this beet salad is delicious and beautiful as it is nutritious.
It is made with a balance of a few simple ingredients: Beets, onion, fresh dill, and crumbled Feta cheese. You can serve it with lemon wedges and the lemon flavor brightens up this beautiful salad.
When are beets available?
Beets are considered a “cool-weather” vegetable and are ready to harvest in the late spring and the fall months.
Beets are at their best from June-October, however, they can be available all year round.
Ingredients
Here’s a list of ingredients that you will need for this recipe:
- 4 medium beets, skins removed, steamed – 1 recipe Instant Pot Beets, skins removed and cut into 3/4-inch (bite-size) pieces
- 1/2 of 1 small red or yellow onion, sliced
- 1 small-medium cucumber, skinned and sliced
- 1/4 cup fresh dill, chopped, plus more for serving
- 1/2 cup Feta cheese, goat cheese also works well with this recipe, or amount to taste
- 4 lemon wedges, for serving
- fine salt, amount to taste, for serving
- fresh ground black pepper, amount to taste, for serving
Lemony Vinaigrette Dressing
- 1/4 cup extra virgin olive oil
- 1-3 teaspoons (about 1/2 of a lemon) freshly squeezed lemon juice – depending on how lemony you want the salad to be
- 1/8-1/4 teaspoon fine salt, amount to taste
- 1/8 teaspoon fresh ground black pepper, amount to taste

LEMONY VINAIGRETTE DRESSING
- 1/4 cup extra virgin olive oil
- 1-3 teaspoons (about 1/2 of a lemon) freshly squeezed lemon juice – depending on how lemony you want the salad to be
- 1/8-1/4 teaspoon fine salt, amount to taste
- 1/8 teaspoon fresh ground black pepper, amount to taste
Instructions
- Make the dressing: In a dresser shaker or mason jar with a lid, add the olive oil, lemon juice, salt, and pepper, then put the lid, and shake until combined.
- Assemble the salad: Add the cooked beets to a large mixing bowl, add the dressing, add the sliced onion, sliced cucumber, and chopped dill, and mix together. Add the mixture to a serving platter and add the feta cheese, lemon wedges, and more dill, to garnish. Enjoy!
