Fresh Herb Baked Salmon
Hi Everyone!
My favorite fish to make is salmon.
This is one area where I can brag that I make a mean salmon dinner.
Everyone in my family loves salmon so I have had plenty of practice making it.
The key to this Fresh Herb Baked Salmon recipe is the marinade – it’s all in the marinade!

Ingredients
- 2.5 pounds Organic Norwegian salmon
Marinade
- 2-3 tablespoons freshly squeezed lemon juice, juice of 1 lemon
- lemon zest, from 1 lemon
- 1/2-3/4 cup olive oil
- 1/4 cup fresh dill, washed and chopped
- 1/4 cup fresh Italian parsley, washed and chopped
- 3 tablespoon unsalted butter, cut into tablespoons to dot the salmon
- 1 teaspoon Kosher salt
- 1/4 teaspoon fresh ground pepper, I use a peppercorn medley
- extra fresh dill and parsley for garnishing washed and chopped

Fresh Herb Baked Salmon
Fresh Herb Baked Salmon is a great way to utilize fresh garden herbs and make salmon in a simple and delicious way. (4-5 servings, gluten-free)
Ingredients
- 2.5 pounds Organic Norwegian salmon
Marinade
- 2-3 tablespoons fresh squeezed lemon juice, juice of 1 lemon
- lemon zest , from 1 lemon
- 1/2-3/4 cup olive oil
- 1/4 cup fresh dill, washed and chopped
- 1/4 cup fresh Italian parsley, washed and chopped
- 3 tablespoon unsalted butter, cut into tablespoons to dot the salmon
- 1 teaspoon Kosher salt
- 1/4 teaspoon fresh ground pepper, I use a peppercorn medley
- extra fresh dill and parsley for garnishing, washed and chopped
Instructions
- Mix all the marinade ingredients together in a small bowl.
- Pour over the salmon and coat it completely, cover with plastic wrap or in a zip lock bag and refrigerate at least a 1/2 hour or overnight.
- Preheat oven to 350 degrees F.
- Line a rimmed baking sheet with aluminum foil or a silicone baking mat. Place the salmon in the middle of the prepared baking sheet.
- Bake for a 1/2 hour. Check for doneness at a half-hour, the salmon should flake off (145 degrees F with a meat thermometer). Enjoy with your favorite sides!
Notes
You can use whatever combination of fresh herbs you want as long as they add up to 1/2 cup total.
