Hi Everyone, I have the perfect, mint-y, herb-y simple syrup for you: Hops Lemon Verbena Mint Simple Syrup.
It has the relaxing effects lemon verbena, cooling, clean mint & slightly bitter hops. Those herb-y, slightly bitter notes are what makes this simple syrup complex in flavor. I love this simple syrup for any hot weather drink.

I made this today and it's yummy. I quadrupled the amount of herbs and steeped for 20 minutes. I also doubled the amount of water and sugar (essentially doubled the recipe with 4x the herbs). The lemon verbena and the mint are both strong herbs (I used peppermint), and want to dominate the other flavors. Easy enough to adjust to your liking.
