This No-Churn Naturally Sweetened Chocolate Ice Cream is a healthier, chocolate ice cream option that is so tasty and delicious. (no refined sugar, non-dairy, vegan option, gluten-free)
Ingredients
- 2 (14 ounce) cans unsweetened coconut milk, the cans must be refrigerated overnight, I use Thai Kitchen canned full fat coconut milk
- 2/3 cup unsweetened cocoa powder, the higher quality you have the better
- 16 ounces pitted Medjool dates, make sure they are sticky and moist!
- 1 teaspoon vanilla extract
- 1/2 cup almond or cashew milk, you can also substitute lactose-free milk or regular milk (if dairy is okay)
- 1/2 teaspoon ground cinnamon, optional
Instructions
- Line a loaf pan with parchment paper set aside.
- Chill a large mixing bowl for 10-15 minutes.
- In a food processor, put the pitted dates and some warm water (just enough to make smooth) and process until smooth, paste-like, and creamy.
- Open the 2 cans of refrigerated unsweetened coconut milk, do not tip over the cans, using a spoon, spoon out the white separated part on the top, and reserve the remaining for drinks or smoothies. In your chilled mixing bowl, whip the coconut milk until smooth.
- Add in the cocoa powder, vanilla extract, almond or cashew milk, and optional ground cinnamon. Mix until fully incorporated.
- Add the date paste into the coconut milk and mix until combined.
- Add the mixture into the prepared loaf pan. Cover with plastic wrap and aluminum foil (to prevent frost). Freeze overnight for solid ice cream.
- Before serving, remove from the refrigerator and let it sit for 15-20 minutes before scooping. It helps to run the ice cream scoop under hot water as well. Enjoy!
Notes
This No-Churn Naturally Sweetened Chocolate Ice Cream also makes a wonderful mousse when chilled for 2-3 hours.
