Hi Everyone, I am always thinking of new ways to enjoy bagels and this Bagel with Roasted Eggplant is no exception!
It’s a toasted bagel with cream cheese, oven-roasted eggplant, a drizzle of extra virgin olive oil, and sprinkled with flakey salt and fresh ground black pepper.

Ingredients
- 1 plain bagel, or bagel variety of choice
- 2-4 tablespoons regular cream cheese – you can substitite with another soft cheese, like goat, neufchantal or blue cheese
- 1 cup (2-4 slices) roasted eggplant
- 1 tablespoon smooth tahini
- 1/8 teaspoon (a pinch) flakey salt
- 1/8 teaspoon (a pinch) fresh ground black pepper
- 1-3 teaspoons fresh herbs (like basil or parsley), chopped
Kitchen Tools
- bread knife – for cutting the bagel, if needed
- butter knife – for spreading cream cheese
- cutting board
- toaster oven or castiron skillet, for toasting

This Bagel with Roasted Eggplant is toasted with cream cheese, topped with roasted eggplant, drizzled with smooth tahini, and sprinkled with fresh herbs, flakey salt, and fresh, ground, black pepper.
Ingredients
- 1 plain bagel, or bagel variety of choice, sliced
- 1 tablespoon unsalted butter
- 2-4 tablespoons regular cream cheese - you can substitite with another soft cheese, like goat, neufchantal or blue cheese
- 1 cup (2-4 slices) roasted eggplant, see notes
- 1 tablespoon smooth tahini, or more to taste
- 1/8 teaspoon (a pinch) flakey salt
- 1/8 teaspoon (a pinch) fresh ground black pepper
- 1-3 teaspoons fresh herbs (like basil or parsley), chopped
Instructions
- You can toast the bagel in a toaster, or toaster oven, it's wonderful toasted in a castiron skillet, with 1 tablespoon (or more as needed) of unsalted butter over low-medium heat. This should take a few minutes to toast.
- Spread cream cheese on the bagel slices, add the sliced eggplant, drizzle smooth tahini on top, and sprinkle chopped herbs, flakey salt, and fresh ground pepper. Enjoy!
