This Coquito (meaning "Little Coconut") recipe is so easy to make in a blender, this particular recipe does not have eggs in it; it has aromatic cinnamon throughout, plus, you have the option to add rum if you wish. Try this festive, sweet, delicious, coconut-based, traditional Christmas drink that originated in Puerto Rico and is also known as the Puerto Rican "Eggnog". (makes 8 cups, served cold, vegetarian)

Hi Friends, I am so excited about this Coquito (pronounced, "Coh-QEE-TOE", it's fun to say:)) recipe.
I have been drinking it alone, putting it in coffee/lattes, dreaming up Coquito-flavored recipes with it.
It's just so tasty and exactly the kind of drink that tastes so festive, yet new and interesting for this late Autumn/Winter time of year.





I love that it can be made from ready-made, store-bought ingredients and blended together at home for a super-quick drink that you can have for a Christmas holiday party, potluck, what have you or, if you are like me, just keep in a pitcher in the fridge all week and drink it every time you crave Coquito!
